METHOD :
1️⃣ Cook the Pasta:
Boil spaghetti in salted water until al dente. Drain, rinse under cold water, and toss with a drizzle of olive oil to prevent sticking.
2️⃣ Prep the Veggies:
While pasta cooks, chop tomatoes, avocado, bell pepper, cucumber, and red onion.
3️⃣ Make the Dressing:
Whisk together olive oil, lime juice, honey, garlic, cumin, chili powder, salt, and pepper in a small bowl.
4️⃣ Assemble the Salad:
In a large bowl, combine cooled pasta, veggies, olives, and cilantro. Pour dressing over and toss gently to coat.
5️⃣ Serve & Enjoy:
Top with avocado and feta cheese (if using). Serve chilled or at room temperature.
Pro Tip: Add avocado just before serving to prevent browning!
