Baked Bean Pot Pie



METHOD :


1️⃣ Prepare the Filling:

  • Preheat your oven to 400°F (200°C).

  • In a large skillet, heat olive oil over medium heat. Sauté the onion, garlic, carrot, and celery for 5-7 minutes, until softened.

  • Stir in the baked beans, frozen peas, smoked paprika, thyme, salt, and pepper. Cook for another 5 minutes, then remove from heat.


2️⃣ Assemble the Pot Pie:

  • Transfer the baked bean mixture to a 9-inch pie dish or individual ramekins.

  • Roll out the puff pastry or pie crust and cut it to fit the top of your dish(es). Place the crust over the filling and crimp the edges to seal.

  • Cut a few small slits in the top to allow steam to escape. Brush the crust with beaten egg for a golden finish.


3️⃣ Bake:

  • Bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbling.

  • Let cool for 5-10 minutes before serving.


4️⃣ Serve & Enjoy:

  • Scoop into bowls and enjoy this cozy, comforting dish with your family!
