METHOD :
1️⃣ Prepare the Filling:
Preheat your oven to 400°F (200°C).
In a large skillet, heat olive oil over medium heat. Sauté the onion, garlic, carrot, and celery for 5-7 minutes, until softened.
Stir in the baked beans, frozen peas, smoked paprika, thyme, salt, and pepper. Cook for another 5 minutes, then remove from heat.
2️⃣ Assemble the Pot Pie:
Transfer the baked bean mixture to a 9-inch pie dish or individual ramekins.
Roll out the puff pastry or pie crust and cut it to fit the top of your dish(es). Place the crust over the filling and crimp the edges to seal.
Cut a few small slits in the top to allow steam to escape. Brush the crust with beaten egg for a golden finish.
3️⃣ Bake:
Bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbling.
Let cool for 5-10 minutes before serving.
