METHOD :
1️⃣ Cook the Bacon:
In a large skillet or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
2️⃣ Brown the Beef:
Add the ground beef to the skillet and cook until browned, breaking it into crumbles as it cooks. Drain excess fat if needed.
3️⃣ Sauté the Vegetables:
Add the onion, bell pepper, and garlic to the skillet. Sauté for 5-7 minutes, until the vegetables are softened.
4️⃣ Combine Ingredients:
Stir in the cooked bacon, pinto beans, kidney beans, baked beans, ketchup, barbecue sauce, molasses, Dijon mustard, smoked paprika, chili powder, black pepper, and salt. Mix well.
5️⃣ Simmer:
If the mixture seems too thick, add ½ cup water. Simmer over low heat for 20-25 minutes, stirring occasionally, until the flavors meld together.
6️⃣ Serve & Enjoy:
Serve hot as a side dish or main course. These beans pair perfectly with cornbread, grilled meats, or coleslaw!
