METHOD :
1️⃣ Cook the Beef:
In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
Add the onion and garlic, and sauté for 2-3 minutes, until softened.
2️⃣ Add Potatoes & Broth:
Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer for 10-12 minutes, until the potatoes are tender.
3️⃣ Make the Soup Creamy:
Stir in the milk, heavy cream, and condensed cheddar cheese soup. Simmer for 5 minutes, stirring occasionally.
Add the shredded cheddar cheese, paprika, oregano, salt, and pepper. Stir until the cheese is melted and the soup is creamy.
4️⃣ Serve & Enjoy:
Ladle the soup into bowls and top with crumbled bacon, green onions, or extra cheese if desired. Serve hot and enjoy this hearty, cheesy delight!
