METHOD :
1️⃣ Prepare the Vegetables:
Slice the cucumber and tomatoes into even rounds about 1/4-inch thick. Thinly slice the red onion and chop the fresh herbs.
2️⃣ Make the Dressing:
Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
3️⃣ Build the Tower:
On a serving plate, alternate layers starting with cucumber, then tomato, feta, olives, and red onion. Repeat 3-4 times, creating a stable tower.
4️⃣ Finish and Serve:
Drizzle the dressing over the tower and sprinkle with fresh dill and mint. Garnish with microgreens if desired. Serve immediately with crusty bread on the side.
