METHOD :
Make the Dressing:
In a small bowl or jar, whisk together olive oil, vinegar, honey, poppy seeds, Dijon, salt, and pepper until emulsified.
Toast the Almonds:
In a dry skillet over medium heat, toast almonds for 2-3 minutes until fragrant. Set aside to cool.
Assemble the Salad:
In a large bowl, combine spinach, strawberries, feta, red onion, and toasted almonds.
Dress & Serve:
Drizzle dressing over the salad just before serving. Toss gently to coat.
Serve immediately for maximum crunch!
