Baked Bean Shepherd’s Pie

 



METHOD :


1️⃣ Prepare the Mashed Potatoes:

  • Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter, milk, salt, and pepper until smooth. Set aside.


2️⃣ Make the Filling:

  • Preheat your oven to 375°F (190°C).

  • In a large skillet, heat olive oil over medium heat. Sauté the onion, garlic, carrot, celery, and bell pepper for 5-7 minutes, until softened.

  • Stir in the baked beans, frozen peas, smoked paprika, thyme, salt, and pepper. Cook for another 5 minutes, then remove from heat.


3️⃣ Assemble the Pie:

  • Spread the baked bean mixture evenly in a 9x13-inch baking dish.

  • Spoon the mashed potatoes over the top and spread evenly. Use a fork to create ridges for a golden crust.

  • Sprinkle with shredded cheddar cheese (if using).


4️⃣ Bake:

  • Bake for 25-30 minutes, or until the top is golden and the filling is bubbling.

  • Let cool for 5-10 minutes before serving.


5️⃣ Serve & Enjoy:

  • Scoop into bowls and enjoy this hearty, comforting dish with your family!
