INGREDIENTS :
For the Salad:
- 12 oz pasta (elbow, rotini, or your favorite shape)
- 6 hard-boiled eggs, peeled and chopped
- ½ cup celery, finely chopped
- ¼ cup red onion, finely chopped
- 2 tbsp fresh parsley, chopped
For the Dressing:
- ½ cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp yellow mustard
- 1 tbsp white vinegar
- 1 tsp sugar
- ½ tsp paprika (plus extra for garnish)
- Salt and pepper, to taste
