Italian Drunken Noodles

 

1) Browning sausage in skillet, 2) Pouring red wine into pan, 3) Tossing finished pasta with sauce and fresh herbs


METHOD :


1️⃣ Cook Pasta:

Boil pasta in salted water until al dente. Reserve 1 cup pasta water, then drain.


2️⃣ Brown Sausage:

In a large skillet, heat olive oil over medium-high. Cook sausage until browned, breaking into crumbles (5-6 mins). Remove and set aside.


3️⃣ Sauté Veggies:

In same skillet, add peppers and onion. Cook 5 mins until soft. Add garlic and red pepper flakes, cook 1 min until fragrant.


4️⃣ Deglaze & Simmer:

Pour in red wine, scraping up browned bits. Stir in crushed tomatoes, tomato paste, and sausage. Simmer 15 mins.


5️⃣ Combine & Serve:

Toss cooked pasta with sauce, adding pasta water as needed. Stir in basil and Parmesan. Serve with extra cheese and a drizzle of olive oil.


Pro Tip: For extra richness, stir in 2 tbsp butter at the end!
