Mexican Chicken Fajita Recipe

METHOD :



1️⃣ Marinate the Chicken:
In a bowl, combine the olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Add the chicken slices and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).

2️⃣ Cook the Chicken:
Heat 1 tbsp olive oil in a large skillet or cast-iron pan over medium-high heat. Add the marinated chicken and cook for 5-6 minutes, stirring occasionally, until browned and cooked through. Remove and set aside.

3️⃣ Sauté the Vegetables:
In the same skillet, add the remaining 1 tbsp olive oil. Sauté the bell peppers and onions for 5-7 minutes until tender and slightly caramelized.

4️⃣ Combine and Warm Tortillas:
Return the chicken to the skillet and toss with the vegetables. Warm the tortillas in a dry skillet or microwave.

5️⃣ Serve & Enjoy:
Serve the chicken and vegetable mixture in warm tortillas, topped with guacamole, salsa, sour cream, and fresh cilantro. Squeeze lime juice over the top and enjoy!
