METHOD :
1️⃣ Prep & Preheat: Heat oven to 350°F (175°C). Grease a 9x9-inch baking pan.
2️⃣ Mix Wet Ingredients: In a large bowl, whisk pumpkin, oil, eggs, sugar, and vanilla until smooth.
3️⃣ Add Dry Ingredients: Sift in flour, baking powder, baking soda, pumpkin pie spice, and salt. Stir until just combined (don’t overmix!).
4️⃣ Bake: Pour batter into pan. Bake 25-30 mins until a toothpick comes out clean. Cool completely.
5️⃣ Frosting Beatdown: Whip cream cheese and butter until fluffy. Add powdered sugar, vanilla, and cinnamon. Spread over cooled bars.
6️⃣ Slice & Devour: Cut into squares and watch them disappear!
