METHOD :
Roast the Beets:
Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for 45-60 minutes, or until tender. Let cool, then peel and chop.Blend the Hummus:
In a food processor, combine roasted beets, chickpeas, garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed.Adjust Consistency:
If the hummus is too thick, add a tablespoon of water or olive oil and blend again until desired consistency is reached.Serve & Garnish:
Transfer the hummus to a serving bowl. Drizzle with olive oil and garnish with sesame seeds and fresh herbs.Enjoy:
