METHOD :
Cook the Pasta:
Cook the pasta according to package instructions until al dente. Drain and set aside.Cook the Chicken:
In a large skillet, heat olive oil over medium heat. Season the chicken with salt and pepper, then cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.Sauté the Aromatics:
In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.Make the Sauce:
Stir in heavy cream and chicken broth, scraping up any browned bits from the bottom of the skillet. Simmer for 2-3 minutes until slightly thickened.Add Spinach & Chicken:
Add fresh spinach and cooked chicken to the skillet. Stir until the spinach wilts and the chicken is heated through.Combine & Serve:
Add the cooked pasta to the skillet and toss to coat in the sauce. Stir in Parmesan cheese until melted. Season with salt, pepper, and red pepper flakes (if using). Serve immediately and enjoy!
