METHOD :
1️⃣ Roast the Sweet Potatoes:
Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with olive oil, smoked paprika, cumin, chili powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and slightly caramelized.
2️⃣ Prepare the Filling:
In a bowl, mix the roasted sweet potatoes, black beans, and cooked rice (if using).
3️⃣ Assemble the Burritos:
Warm the tortillas in a skillet or microwave. Place a portion of the sweet potato and black bean mixture in the center of each tortilla.
Top with avocado slices, shredded cheese (if using), and fresh cilantro.
4️⃣ Fold the Burritos:
Fold the sides of the tortilla over the filling, then roll tightly to form a burrito.
