METHOD :
1️⃣ Coat the Chicken:
In a bowl, toss the chicken pieces with cornstarch until evenly coated.
2️⃣ Cook the Chicken:
Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5-6 minutes, stirring occasionally, until golden brown and cooked through. Remove and set aside.
3️⃣ Toast the Cashews:
In the same skillet, add the cashews and toast for 2-3 minutes until lightly golden. Remove and set aside.
4️⃣ Sauté the Vegetables:
Add the remaining 1 tbsp of oil to the skillet. Sauté the red bell pepper, white parts of the green onions, garlic, and ginger for 2-3 minutes until fragrant.
5️⃣ Combine and Simmer:
Return the chicken and cashews to the skillet. Pour in the sauce ingredients and stir to coat everything evenly. Simmer for 2-3 minutes until the sauce thickens.
6️⃣ Serve & Enjoy:
Garnish with the green parts of the onions and sesame seeds if desired. Serve hot over steamed rice or noodles. Enjoy this quick and delicious meal!
