INGREDIENTS :
- 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 1/4 cup cornstarch
- 2 tbsp vegetable oil
- 1/2 cup unsalted cashews
- 1 red bell pepper, diced
- 3 green onions, sliced (white and green parts separated)
- 3 cloves garlic, minced
- 1 tsp fresh ginger, minced
For the Sauce:
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp oyster sauce (or substitute with more hoisin)
- 1 tbsp rice vinegar
- 1 tbsp honey (or brown sugar)
- 1/4 cup water
- 1 tsp sesame oil (optional)
For Serving:
- Steamed rice or noodles
- Optional garnish: sesame seeds or extra green onions
