1 cup red lentils, rinsed and drained
1 can (14 oz) diced tomatoes
1 can (14 oz) coconut milk
4 cups vegetable broth
2 cups fresh spinach (or kale)
Salt and pepper, to taste
Optional garnish: fresh cilantro, lime wedges, or a drizzle of coconut milk
