METHOD :
1️⃣ Sauté the Aromatics:
In a large pot, heat the coconut oil over medium heat. Add the onion and sauté for 3-4 minutes until softened. Add the garlic, ginger, curry powder, turmeric, cumin, and chili flakes (if using). Cook for 1-2 minutes until fragrant.
2️⃣ Add Lentils and Liquids:
Stir in the red lentils, diced tomatoes, coconut milk, and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.
3️⃣ Add Greens:
Stir in the spinach (or kale) and cook for 2-3 minutes until wilted. Season with salt and pepper to taste.
4️⃣ Serve & Enjoy:
Ladle the soup into bowls and garnish with fresh cilantro, a squeeze of lime, or a drizzle of coconut milk. Serve hot with naan bread or steamed rice. Enjoy this creamy, comforting soup!
