METHOD :
1️⃣ Prep & Preheat:
Preheat oven to 350°F (175°C). Grease a 15x10” jelly roll pan.
2️⃣ Make the Cake:
Whisk flour, sugar, baking soda, and salt.
In a saucepan, melt butter with water. Bring to a boil, then pour over dry ingredients.
Stir in buttermilk, eggs, and extracts. Pour into pan.
Bake 18-22 mins until golden.
3️⃣ Toast Coconut:
Spread coconut on a baking sheet. Toast 5-7 mins at 350°F, stirring once.
4️⃣ Glaze & Finish:
While cake bakes, melt butter with milk and coconut extract. Whisk in powdered sugar.
Pour warm glaze over hot cake. Sprinkle with toasted coconut.
Let cool before slicing.
