Gaytime martini

 

METHOD :

1- Place thickened cream and ice-cream in a small saucepan. Heat over medium-low heat, stirring, until melted and well combined. Transfer to a jug and place in the fridge for 15 minutes to cool.

2- Meanwhile, place half the caramel sauce in a small, shallow dish. Place half the biscuits in a separate dish. Dip the rim of 2 martini glasses, 1 at a time, in caramel sauce, then in the biscuit. Place glasses in the fridge for 10 minutes to set. Reserve remaining biscuit.

3- Pour Baileys, schnapps, vodka and remaining caramel sauce in a small jug and stir until well combined. Divide mixture between the prepared glasses.

4- Place the ice in a cocktail shaker. Pour in ice-cream mixture then shake well until frothy.

5- Strain the ice-cream mixture over the martini mixture in prepared glasses. Top with reserved crushed biscuit. Top with the Gaytime Bites skewers. Serve immediately (see note).

RECIPE NOTES

Stir martinis before serving until alcohol and ice-cream mixture are well combined. 

We decorated this cocktail with Streets Golden Gaytime Bites, threaded onto cocktail skewers. If you cannot find these, you can chop up a regular Golden Gaytime.
