INGREDIENTS :
- 4 tbsp unsalted butter 
- 1 large onion, diced 
- 1 lb mushrooms, sliced (cremini or button mushrooms work well) 
- 2 cloves garlic, minced 
- 2 tbsp all-purpose flour 
- 2 cups vegetable or chicken broth 
- 1 cup whole milk 
- 1 tsp smoked paprika 
- 1 tsp dried dill (or 1 tbsp fresh dill) 
- 1 tsp soy sauce 
- ½ cup sour cream 
- Salt and pepper, to taste
