METHOD :
1️⃣ Prep & Preheat:
Preheat oven to 350°F (175°C). Line baking sheets with parchment.
Toast coconut in a dry skillet over medium heat until golden (3-4 mins).
2️⃣ Mix the Dough:
Whisk flour, baking soda, baking powder, and salt.
In another bowl, beat butter, peanut butter, and sugars until fluffy. Add egg and vanilla.
Gradually mix in dry ingredients, then fold in oats, chocolate chips, coconut, and pecans.
3️⃣ Bake & Ride Into the Sunset:
Drop 2-tbsp scoops onto sheets, 2” apart.
Bake 10-12 mins until edges are golden but centers are soft.
Cool on sheets 5 mins before transferring.
