Pineapple Bread with Coconut Icing

    

Moist Pineapple Bread with coconut icing and toasted coconut topping.



METHOD :



1️⃣ Prep & Mix:

Preheat oven to 350°F (175°C). Grease a 9x5” loaf pan.

Whisk flour, baking soda, and salt in a bowl.

2️⃣ Make Batter:

In another bowl, beat sugar, eggs, oil, and vanilla.

Stir in pineapple with juice.

Gradually add dry ingredients, then fold in shredded coconut.

3️⃣ Bake & Cool:

Pour into pan. Bake 50-60 mins until golden and a toothpick comes out clean.

Cool in pan 10 mins, then transfer to a wire rack.

4️⃣ Ice & Serve:

Whisk icing ingredients until smooth. Drizzle over cooled bread.

Sprinkle with toasted coconut. Slice and enjoy!
