  • ½ ripe avocado, mashed

  • ½ cup arugula

  • ¼ cup marinated artichoke hearts, drained and chopped

  • 2-3 slices tomato

  • 2-3 slices cucumber

  • 1 tbsp hummus (optional, for extra flavor)

  • 1 tsp lemon juice

  • Salt and pepper, to taste
