METHOD :
1️⃣ Prepare the Bread:
Toast the bread slices if desired.
2️⃣ Assemble the Sandwich:
Spread the mashed avocado evenly on one slice of bread. Drizzle with lemon juice and sprinkle with salt and pepper.
Layer the arugula, artichoke hearts, tomato slices, and cucumber slices on top of the avocado.
If using, spread hummus on the other slice of bread.
3️⃣ Finish & Serve:
Place the second slice of bread on top to complete the sandwich. Slice in half if desired.
Serve immediately and enjoy this fresh, flavorful veggie sandwich!
