METHOD :
1️⃣ Carve the “Cake”:
Slice off watermelon ends to create a flat base.
Stand upright and trim rind off sides, shaping into a cake-like cylinder.
Pat dry with paper towels (key for frosting adhesion!).
2️⃣ Make Whipped Cream Frosting:
Beat cream, powdered sugar, and vanilla to stiff peaks.
3️⃣ Decorate:
Spread whipped cream over watermelon with an offset spatula.
Arrange fruit “flowers” (kiwi slices + berries) and sprinkle coconut.
Chill 1 hour before slicing.
