METHOD :
1️⃣ Prep & Preheat:
Preheat oven to 350°F (175°C). Grease a 9x5” loaf pan.
Grate zucchini (no need to drain—the moisture is key!).
2️⃣ Mix Dry Ingredients:
Whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
3️⃣ Make Batter:
In another bowl, beat eggs, sugars, oil, and vanilla.
Stir in zucchini, then gently fold in dry ingredients.
Add nuts or chocolate chips if using.
4️⃣ Bake & Cool:
Pour into pan. Bake 50-60 mins until a toothpick comes out clean.
Cool in pan 10 mins, then transfer to a wire rack.
