INGREDIENTS :


  • 1 lb pappardelle pasta (or fettuccine)
  • 1 lb hot Italian sausage, casings removed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, thinly sliced
  • 4 garlic cloves, minced
  • 1/2 cup dry red wine (Chianti or Cabernet)
  • 1 (28 oz) can crushed tomatoes
  • 1/4 cup tomato paste
  • 1 tsp red pepper flakes (adjust to taste)
  • 1/2 cup fresh basil, chopped
  • 1/4 cup grated Parmesan + extra for serving
  • 2 tbsp olive oil
  • Salt & black pepper to taste

Optional Add-ins:

  • 1 cup sliced mushrooms
  • 1/2 cup heavy cream (for creamier sauce)
