METHOD :
Combine Ingredients:
In a crockpot, add diced potatoes, onion, garlic, chicken broth, salt, pepper, paprika, and thyme. Stir to combine.Cook:
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.Thicken the Soup:
In a small bowl, mix cornstarch and water to create a slurry. Stir the slurry into the soup, then add heavy cream and shredded cheese. Cook on high for an additional 15-20 minutes, or until the soup thickens.Add Bacon:
Stir in the crumbled bacon, reserving some for topping.Serve & Garnish:
Ladle the soup into bowls and top with shredded cheese, extra bacon, green onions, or a dollop of sour cream. Serve hot and enjoy!
