🍰 Fluffy Yogurt Cloud Cake




METHOD :


  1. Preheat & Prepare:
    Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line it with parchment paper.

  2. Mix Dry Ingredients:
    In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

  3. Beat Egg Whites:
    In a clean, dry bowl, beat the egg whites until stiff peaks form. Set aside.

  4. Make the Batter:
    In a large bowl, whisk together egg yolks and sugar until pale and creamy. Add yogurt, vegetable oil, vanilla extract, and lemon zest (if using). Mix until smooth.
    Gradually fold in the dry ingredients until just combined.

  5. Fold in Egg Whites:
    Gently fold the beaten egg whites into the batter in two additions, being careful not to deflate the mixture.

  6. Bake:
    Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool & Serve:
    Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar and top with fresh berries before serving.
