Southwestern Egg Rolls

Step-by-step: cooking filling, wrapping egg rolls, and frying until golden brown


METHOD :


1️⃣ Prepare the Filling
In a skillet over medium heat, heat olive oil. Add shredded chicken, black beans, corn, bell pepper, spinach, green onions, and spices. Cook for 3–5 minutes, stirring, until the veggies are soft and flavors combine. Remove from heat and let cool slightly, then stir in the shredded cheese.

2️⃣ Assemble the Egg Rolls
Lay an egg roll wrapper diagonally. Add 2 tablespoons of filling in the center. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with a bit of water.

3️⃣ Fry Until Golden
Heat vegetable oil (about 1 inch deep) in a pan over medium-high heat. Fry egg rolls in batches, turning occasionally, until golden brown and crispy—about 2–3 minutes per side. Drain on paper towels.

4️⃣ Serve & Enjoy
Serve hot with ranch, salsa, or avocado dip and enjoy these flavor-packed rolls!
