METHOD :
1- Heat oil in a large pan on medium. Cook onion for 5 minutes, until soft. Increase heat to high. Add mince and cook, stirring to break up any lumps, for 5 minutes, until browned. Add carrots, passata and Beanz Creationz™ and stir to combine. Bring to the boil. Reduce heat and simmer, covered, for 15 minutes, until reduced slightly. Stir through peas and remove from heat.
2- Preheat grill to medium and line 2 large baking trays with foil. Lay 2 tortillas on each prepared tray. Top each tortilla with 2/3 cup of mince mixture and 1/4 cup of cheese. Top with another tortilla and press down slightly. Sprinkle ½ cup of cheese over each quesadilla. Cook under grill for 8-10 minutes, until golden and bubbling.
3- Meanwhile, mix together salsa ingredients and season well. Slide each quesadilla onto serving plates and top with a dollop of sour cream and salsa.
