Easy Cozy Leek and Thyme Pot Pie 🌿

 




METHOD :


  1. Preheat & Prepare:
    Preheat the oven to 400°F (200°C). Roll out the puff pastry or pie crust to fit your baking dish.

  2. Cook the Filling:
    In a large skillet, melt butter over medium heat. Add leeks and garlic, sautéing until softened (about 5 minutes).
    Stir in flour and cook for 1-2 minutes to remove the raw flour taste.
    Gradually add broth and cream, stirring until the mixture thickens.
    Add chicken, carrots, peas, thyme, salt, and pepper. Simmer for 5-7 minutes until the vegetables are tender.

  3. Assemble the Pot Pie:
    Transfer the filling to a baking dish. Cover with the rolled-out pastry, trimming any excess. Cut a few slits in the top to allow steam to escape. Brush with beaten egg for a golden crust.

  4. Bake:
    Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbling.

  5. Serve & Enjoy:
    Let cool for 5-10 minutes before serving. Enjoy this cozy, aromatic pot pie!
