🍋 Easy Lemon Icebox Cake 🍰



METHOD :


  1. Make the Lemon Cream:
    In a large bowl, whisk together sweetened condensed milk, lemon juice, and lemon zest until smooth. Gently fold in the whipped topping until well combined.

  2. Assemble the Cake:
    In a 9x13-inch baking dish, spread a thin layer of lemon cream on the bottom. Place a single layer of graham crackers on top, breaking them as needed to fit.
    Spread another layer of lemon cream over the graham crackers, then repeat the layers until you run out of ingredients, ending with a layer of lemon cream on top.

  3. Chill:
    Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the graham crackers to soften.

  4. Garnish & Serve:
    Before serving, garnish with fresh berries and a sprinkle of lemon zest. Slice and enjoy!
