Lemon Chicken Salad 🥗




METHOD :


1️⃣ Prepare the Chicken:

  • In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper.
  • Coat the chicken breasts with the marinade and let sit for 15 minutes.
  • Grill or pan-sear the chicken for 5-7 minutes per side until fully cooked. Let rest before slicing.

2️⃣ Make the Dressing:

  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper.

3️⃣ Assemble the Salad:

  • In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, avocado, and feta cheese.
  • Add the sliced grilled chicken on top.

4️⃣ Drizzle & Serve:

  • Pour the lemon dressing over the salad and toss gently.
  • Garnish with toasted nuts (if using) and enjoy fresh! 🥗🍋
