🍋 Lemon Shrimp Orzo with Asparagus 🍋



METHOD :


1️⃣ Cook the Orzo & Asparagus:

  1. Bring a pot of salted water to a boil and cook the orzo according to package instructions. Drain and set aside.
  2. In the last 2 minutes of cooking, add the asparagus to the pot to blanch. Drain and set aside.

2️⃣ Cook the Shrimp:

  1. Heat 2 tbsp of olive oil in a large skillet over medium heat.
  2. Add shrimp, minced garlic, salt, pepper, red pepper flakes, and paprika. Cook for 2-3 minutes per side until shrimp are pink and opaque. Remove from the pan and set aside.

3️⃣ Make the Lemon Butter Sauce:

  1. In the same skillet, melt butter and add lemon juice, lemon zest, and broth. Stir well.
  2. Add the cooked orzo and asparagus, tossing to coat in the sauce.
  3. Return the shrimp to the skillet, sprinkle with Parmesan cheese, and mix well.
  4. Remove from heat and garnish with fresh parsley.

Serve immediately and enjoy this light, citrusy seafood dish! 🍋🍤
