METHOD :
1️⃣ Cook the Orzo & Asparagus:
- Bring a pot of salted water to a boil and cook the orzo according to package instructions. Drain and set aside.
- In the last 2 minutes of cooking, add the asparagus to the pot to blanch. Drain and set aside.
2️⃣ Cook the Shrimp:
- Heat 2 tbsp of olive oil in a large skillet over medium heat.
- Add shrimp, minced garlic, salt, pepper, red pepper flakes, and paprika. Cook for 2-3 minutes per side until shrimp are pink and opaque. Remove from the pan and set aside.
3️⃣ Make the Lemon Butter Sauce:
- In the same skillet, melt butter and add lemon juice, lemon zest, and broth. Stir well.
- Add the cooked orzo and asparagus, tossing to coat in the sauce.
- Return the shrimp to the skillet, sprinkle with Parmesan cheese, and mix well.
- Remove from heat and garnish with fresh parsley.
