METHOD :
Mix Dry Ingredients:
In a large bowl, whisk together flour, sugar, baking powder, cardamom, and salt.Add Wet Ingredients:
Make a well in the center of the dry ingredients. Add coconut milk, beaten egg, and melted butter. Mix until a soft dough forms.Knead the Dough:
Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.Shape the Mandazi:
Roll out the dough to about ½-inch thickness. Cut into triangles, squares, or circles using a knife or cookie cutter.Heat the Oil:
In a deep pan, heat oil over medium heat until hot (about 350°F or 175°C).Fry the Mandazi:
Fry the dough pieces in batches, turning occasionally, until golden brown on both sides (about 2-3 minutes per side). Drain on paper towels.Serve & Enjoy:
Dust with powdered sugar if desired, and serve warm with tea, coffee, or your favorite dipping sauce.
