METHOD :
Make the Roux:
In a medium saucepan, heat vegetable oil over medium heat. Whisk in flour and cook for 1-2 minutes, stirring constantly, until golden brown.Add Spices:
Stir in chili powder, cumin, garlic powder, onion powder, and oregano. Cook for 1 minute to toast the spices.Add Liquids:
Gradually whisk in chicken or vegetable broth, ensuring no lumps form. Stir in tomato sauce and bring to a simmer.Simmer:
Reduce heat to low and simmer for 10-15 minutes, stirring occasionally, until the sauce thickens.Season:
Taste and season with salt, pepper, and sugar (if using) to balance the flavors.Blend (Optional):
For a smoother sauce, use an immersion blender or transfer to a regular blender and blend until smooth.Serve & Store:
Use immediately in your favorite dishes or store in an airtight container in the fridge for up to a week.
