Italian Drunken Noodles



METHOD :



1️⃣ Cook the Pasta:

  • Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.


2️⃣ Cook the Sausage:

  • In a large skillet or Dutch oven, heat 1 tbsp olive oil over medium heat.

  • Add the Italian sausage and cook, breaking it into crumbles, until browned and cooked through. Remove the sausage and set aside.


3️⃣ Sauté the Vegetables:

  • In the same skillet, add the remaining 1 tbsp olive oil.

  • Sauté the onion and bell peppers for 5-7 minutes, until softened.

  • Add the garlic and red pepper flakes, and cook for 1-2 minutes until fragrant.


4️⃣ Make the Sauce:

  • Return the cooked sausage to the skillet.

  • Stir in the marinara sauce, red wine, and heavy cream. Simmer for 5-7 minutes, allowing the flavors to meld.


5️⃣ Combine Pasta & Sauce:

  • Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.

  • Season with salt and pepper to taste.


6️⃣ Serve & Enjoy:

  • Garnish with fresh basil or parsley and a sprinkle of Parmesan cheese.

  • Serve hot and enjoy this hearty, flavorful dish!
