METHOD :
1️⃣ Cook the Pasta:
Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
2️⃣ Cook the Sausage:
In a large skillet or Dutch oven, heat 1 tbsp olive oil over medium heat.
Add the Italian sausage and cook, breaking it into crumbles, until browned and cooked through. Remove the sausage and set aside.
3️⃣ Sauté the Vegetables:
In the same skillet, add the remaining 1 tbsp olive oil.
Sauté the onion and bell peppers for 5-7 minutes, until softened.
Add the garlic and red pepper flakes, and cook for 1-2 minutes until fragrant.
4️⃣ Make the Sauce:
Return the cooked sausage to the skillet.
Stir in the marinara sauce, red wine, and heavy cream. Simmer for 5-7 minutes, allowing the flavors to meld.
5️⃣ Combine Pasta & Sauce:
Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
Season with salt and pepper to taste.
6️⃣ Serve & Enjoy:
Garnish with fresh basil or parsley and a sprinkle of Parmesan cheese.
