Pasta with Broccolini, Peas, and Pancetta

METHOD :



1️⃣ Cook the Pasta:

Cook the pasta according to package instructions in a large pot of salted boiling water. Reserve ½ cup of pasta water, then drain the pasta.

2️⃣ Cook the Pancetta:

In a large skillet, cook the pancetta over medium heat until crispy, about 5-7 minutes. Remove the pancetta with a slotted spoon and set aside, leaving the fat in the skillet.

3️⃣ Sauté the Vegetables:

Add the broccolini to the skillet and sauté for 3-4 minutes, until tender-crisp. Add the garlic and cook for 1 minute, until fragrant.

Stir in the peas and cook for another 2 minutes.

4️⃣ Combine Everything:

Add the cooked pasta and pancetta to the skillet. Drizzle with olive oil and toss to combine. If the pasta seems dry, add a splash of the reserved pasta water.

5️⃣ Serve & Enjoy:

Sprinkle with grated Parmesan cheese and season with salt, pepper, and red pepper flakes (if using). Serve hot and enjoy this vibrant, flavorful dish!
