METHOD :
1️⃣ Brown the Chicken:
Season the chicken thighs with salt and pepper. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken, skin-side down, and cook for 5-6 minutes per side, until golden brown. Remove and set aside.
2️⃣ Sauté the Vegetables:
In the same skillet, add the onion and bell peppers. Sauté for 5-7 minutes, until softened. Add the garlic and cook for 1 minute, until fragrant.
3️⃣ Simmer the Sauce:
Stir in the diced tomatoes, chicken broth, smoked paprika, thyme, and bay leaf. Bring to a simmer.
4️⃣ Cook the Chicken:
Return the chicken to the skillet, nestling it into the sauce. Cover and simmer for 25-30 minutes, until the chicken is cooked through and tender.
5️⃣ Serve & Enjoy:
Remove the bay leaf and garnish with fresh parsley if desired. Serve hot with rice or crusty bread and enjoy this flavorful French dish!
