METHOD :
1️⃣ Marinate the Beef:
In a bowl, combine the beef chunks, soy sauce, and calamansi juice. Marinate for at least 30 minutes.
2️⃣ Brown the Beef:
Heat cooking oil in a large pot over medium heat. Brown the beef chunks in batches, then set aside.
3️⃣ Sauté the Aromatics:
In the same pot, sauté the onion and garlic until fragrant and softened.
4️⃣ Simmer the Stew:
Return the beef to the pot. Add the beef broth, tomato sauce, tomato paste, bay leaves, and sugar. Stir well.
Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
5️⃣ Add Vegetables:
Add the potatoes, carrots, and bell pepper. Simmer for another 15-20 minutes, or until the vegetables are tender.
6️⃣ Serve & Enjoy:
Season with salt and pepper to taste. Garnish with chopped green onions and serve hot with steamed rice.
